Corn with Sass

Looking for an easy side dish to spice up your Canada Day barbecue tomorrow? Try this tasty corn; it’s a jazzed up seasonal treat!
 Prepare corn on the cob as usual—barbeque, boil, microwave or oven roast. After it’s cooked to perfection, place it on a colourful platter and drizzle it with this tasty lime butter.

½ cup of soft butter

2 tsp chili powder or a combo of chili powder, cayenne powder, cumin and paprika

1 lime, zest and juice

Dash of salt and pepper

Pinch of red pepper flakes

In a small, pretty bowl, blend the butter, spice, lime zest and juice, salt, pepper and red pepper flakes. Taste and adjust flavours to your liking. Refrigerate. When ready to use, melt in the microwave, stir and drizzle. Serve with any leftover butter and lime wedges.

*This recipe is great for six cobs. Double it for a larger crowd.
