Looking to jazz up your weekend menu? Whether you’re planning a barbecue, a picnic or a family dinner on the deck, this recipe for mango salsa will dress up your menu–and your table–beautifully. It’s colourful and pretty to look at and the taste is pure summer goodness.
Try it with chicken, fish, pork or tacos. It’s also great as an appetizer with shrimp or a bowl of tortilla chips.
1 ripe mango, peeled, pitted, and diced
1/2 medium red onion, finely chopped
1 Jalapeño pepper, chopped finely
1 small tomato or red pepper, chopped
3 tbsp cilantro, chopped
1 lime, juiced
1 clove garlic, pressed
Salt and pepper to taste
Seedless cucumber can be added too.
Combine dry(ish) ingredients in a bowl. Stir in lime juice. Modify ingredients to taste. Season with salt and pepper. Serve with sliced avocado and lime wedges to garnish.
