My kids (big and bigger) devour guacamole. Yes, they squawk over who gets the rest of the bowl; that’s why I often make a double batch. You’d almost think it was junk food. Instead, it’s loaded with healthy goodness, so I serve it often.
3 avocados peeled, pitted, and mashed
pinch salt (optional)
few dashes hot sauce (optional)
1/2 cup diced red onion
3 generous tablespoons chopped fresh cilantro
2 plum tomatoes, seeded and diced
1-2 cloves garlic, pressed
1 jalapeno pepper, cored, seeded and minced
Wash, dry and chop cilantro; set aside.
Dice onion and tomatoes, then place in small bowl.
Add garlic and minced jalapeno.
Roll limes on the counter in order to extract maximum juice, then cut both in half.
Peel avocadoes and mash them in a serving bowl.
Squeeze in juice from three of the lime halves.
Add salt and hot sauce, if using.
Stir in other ingredients.
Cut remaining lime-half into four wedges and use for garnish, along with a couple of sprigs of cilantro.
Serve immediately with tacos, tostadas, fajitas or tortilla chips.
