Looking for an easy make-ahead salad for your Canada Day celebration? This strawberry quinoa kale salad is as simple to prepare as it is delicious. It’s full of nutrition too!
Ingredients
Salad
2 cups baby spinach
2 cups kale, chopped
1 cup cooked quinoa
1 cup button mushrooms
½ cup red onion rings, thinly sliced
1 1/2 cups halved strawberries
1/2 cup sliced almonds, toasted
1/3 cup goat, feta or blur cheese, crumbled
Vinaigrette
1/2 c cranberry juice
1 teaspoon lemon juice
1 clove garlic, crushed
1/4 cup canola oil
1 tablespoon raspberry vinegar
1 teaspoon honey
Salt and pepper
Method
- Vinaigrette: Combine all ingredients and whisk until smooth.
- Salad: In a glass serving bowl combine the spinach, kale, quinoa, mushrooms, onion, strawberries and almonds, and toss together gently. Pour the vinaigrette over the salad and gently mix. Top with crumbled cheese before serving.
