Chewy Toffee Bars


¾ cup unsalted butter, plus extra for the pan

2 cups brown sugar

2 cups all-purpose flour

2 tsp baking powder

Pinch of salt

¾ cup pecans, chopped

2 eggs

2 tsp vanilla

3 MACKINTOSH TOFFEE bars, smacked


Preheat the oven to 350°F. Line a 9×9 pan with parchment paper and grease the paper with butter. Melt the butter in a medium saucepan over medium heat. Add the brown sugar and stir until the sugar begins to dissolve and the mixture is bubbling.  Allow the sugar to cool to room temperature. Meanwhile, combine the dry ingredients in a small bowl and toast the pecans in the oven for about 5 minutes, or until fragrant. Stir the eggs into the sugar mixture and add the vanilla. Mix in the flour mixture and then fold in the toasted pecans. Spread half of the thick batter into the greased pan, layer in the MACK TOFFEE pieces and top with the remaining batter. Bake until golden brown, about 35 minutes. Allow the bars to cool for 15 minutes before lifting out of the pan to cut and serve.
