Island Style Peanut Butter Cookies

Our studio apartment in Barbados is small, and the kitchen is even smaller.
When I stumbled across this simple cookie recipe the other day I thought it would be the perfect way to break-in my kitchen. This recipe only requires 5 ingredients that you most likely have in your kitchen right now. (if I do, than you definitely do.)

Island Style Peanut Butter Cookies


1 cup natural peanut butter
1 egg
½ cup cooking oats
¼ cup sugar (I used raw Bajan cane sugar – it was only .60 cents for a big bag!)
¼ cup unsweetened shredded coconut



Preheat oven to 350 degrees F
Combine all ingredients in a bowl – stir to combine
Form into 1 inch balls, and place them on a ungreased cookie sheet
Dip a fork in sugar, and press the cookies down twice (to form a criss-cross pattern)
Bake for 10-12 minutes or until dry on the top
Let cool on the pan for 2 minutes, and than transfer to a cooling rack for 10 minutes
