Weekend Eats: Lemon Chicken

When Mother Nature tosses you a few lemons – by way of a frigid weekend forecast – what are you going to do? Make Lemon Chicken, of course.

That’s right. Whip together this easy recipe, pop it in the oven and snuggle up for a cozy weekend with good food and great company.  (You can even be grateful you don’t have to water the garden!)

Lemme Have Some of that Lemon Chicken!
2 lemons
1 large chicken, cut into serving-size pieces or 6 chicken breasts, skin on
3 potatoes, washed and cut into wedges
1 tbsp olive oil
3 cloves garlic, crushed
1 tsp dried oregano
Salt and pepper to taste

Preheat oven to 350 ºF.
Slice one lemon; squeeze the juice from the other one.
Place the chicken and potatoes in a large baking dish. Sprinkle with oil, lemon juice, garlic, oregano, salt and pepper. Turn the chicken and potatoes so they are coated on all sides. Leave chicken skin-side up. Put potatoes and lemon slices between pieces of chicken.
Bake for 30 minutes, basting with the juices. Continue to bake another 30 minutes or until chicken is cooked and potatoes are golden.
